Hi Jamie,
 
you have to (let the) router generate 'Alive' records. They state the current usage. These records normally come every 60 mins (CISCO-Default, no idea on a Juniper), so you can follow up the user quite well. You do need a logic however to granulate the resolution, so you need to take f.e. one day the last Alive-Record you see, and then search for the next day for the last record you see, may this be Stop or another Alive. Subtraction let you then generate the usage for the day... (be careful, you also need to add in the output/input Gwords, because the counters normally use only 32 bit unsigned - max. 4 Gig - than the routers add a AccountingInputGWord (or OutputGword), which is a count of how many times the AccountingInput(Output)Octets counter did an overrun... 
 
You can do this quite nicely with stored procedures on the database direct and on the fly...

I have a problem with radius accounting.  When a customer logs in his
start record is generated but his usage will only be added to our
database when the stop record is seen.  Sometimes this can be weeks.

If there any method than can be used (other than disconnecting the user)
to update the radius accounting records every hour or so?

Would Accounting-Off records help?
